At Ricette, we offer a lunch menu and an evening menu, each designed to suit the mood and moments of the day.
Our menus change regularly for both lunch and dinner, featuring original recipes prepared with fresh, seasonal ingredients. We also offer gluten-free options, so everyone can enjoy a delicious meal with peace of mind.
And if you’re in the mood for something simple and light, we’ll be delighted to prepare a gorgonzola pasta, a dish with seasonal vegetables, or a flavorful arrabbiata.
Meet Francesco Bertuna
At the origin of Ricette is Francesco Bertuna, a Sicilian from Catania, a self-taught food enthusiast, passionate about Italian cuisine and formerly an agronomist engineer.
His atypical background shines through in his cooking: free, instinctive, and always seeking balance and truth in flavor.
For over twelve years, he delighted guests at his first restaurant Olio Pane Vino.
Today, with Ricette Ristorante, he embarks on a new culinary adventure in Paris’s 5th arrondissement, blending Italian tradition with personal creativity.


Abterra Biancolilla: The Soul of Our Dishes
At Ricette, we use Abterra extra-virgin olive oil, a symbol of Sicilian craftsmanship.
Made from olives grown in Sambuca di Sicilia, hand-picked and cold-pressed within hours using exclusively mechanical methods, this oil is pure, vibrant, and harmonious.
Its production reflects a deep respect for the land, its rhythms, and the time needed for the terroir to express itself fully.
Soft, balanced, and delicately aromatic, Abterra reveals notes of green almond, hazelnut, and freshly cut grass — a signature that elevates each of our dishes and embodies our commitment to quality.
Abterra, “born from the earth,” carries the vision of its founder, Davide D’Alia: a return to the essential, to living matter, and to the patience of nature — a philosophy we share, offering the finest expression of Sicily.
